Chocolats Passion, owned by French native Catherine Wiersema, seeks to deliver beauty and deliciousness with every chocolate. Catherine’s core belief is that “you eat with your eyes first”, so each flavor displays a softly hued cocoa butter coloration. She loves creating flavors that balance sweetness with bright or bittersweet counterpoints. Great ingredients are essential, so Catherine only uses organic cream, butter, honey and citrus, and makes her hazelnut and pistachio pastes from scratch with a stone grinder. Candying is done the old fashioned French way, over a period of two weeks. Once created, her chocolates find their way in beautiful gift boxes that can be customized for the perfect gift.
Cocoa Connection was established to showcase tasty abundant Maine ingredients through delightful chocolate truffle creations. By sourcing at least one of our ingredients locally we connect our love of quality chocolate with our love for Maine’s best flavors. We provide a monthly chocolate truffle subscription with your choice of various flavors. Each truffle is handmade to order, by our in house chocolatier, to ensure that the freshest truffles makes it to your doorstep. Our goal is to help our Maine producers thrive by utilizing ingredients they produce and source. Help us achieve this and enjoy some delightful truffles by making your first purchase and/or signing up for a first of the month monthly subscription.

In 2013 the couple decided it was time to open their own business and relocate to York Maine. They named the business after Ted Flanagan’s mother, Joan Rossi Flanagan, who also lives in York. In January of 2016 the bakery relocated to its new home in Meadowbrook Plaza, 647 US Route 1, York, Maine 03909.
Chef Ed Foley is a Pastry Chef who trained the new owner, Andrea Swanson, and has been a friend and mentor to her for over 15 years. Andrea has worked in restaurants and hotels in the Portland and Greater Portland area for over 20 years learning the ropes and honing the skills she acquired working with her mentor Ed Foley. As Ed looked to the future, and made the decision to sell his gourmet pastry shop, Andrea was first on his list to pass the baker’s torch, and she jumped at the opportunity and named it Scattoloni. Her main goal is to provide the same quality service and products at Scattoloni that you’ve come to love and expect from Foley’s. Her second is to entice you in to try her own creations alongside the favorites, so save room! All baked goods are made on the premises with top quality ingredients.
